Oriental Shrimp

Amount Measure Ingredient -- Preparation Method

1 pound medium fresh shrimp -- peeled and deveined
1/2 cup orange juice
1/4 cup chicken broth
1/4 cup dry white wine -- (optional)
2 teaspoons minced fresh garlic
2 teaspoons fresh ginger root -- peeled
2 teaspoons soy sauce
1/8 teaspoon pepper
Combine all ingredients except in saucepan. Gently toss shrimp in mixture.
Let stand for 15 minutes, stirring occasionally.
Bring to a boil and stir constantly. Cook 30 seconds until shrimp are pink
and firm.
Remove to serving bowl with slotted spoon. Keep warm.
Continue to boil liquid for 7-8 minutes or until 2/3 cup remains. Pour over
shrimp.

NOTES : This was excellent! It can be served over hot cooked rice.
Reheating or freezing is not recommended for this dish. Recipe can be cut
in 1/2 if all can not be eaten at meal.
