* Exported from MasterCook * Oatmeal Cake Recipe By : Serving Size : 16 Preparation Time :0:20 Categories : Volume 6-09 Sept 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups boiling water 1 cup oatmeal 1 cup white sugar 1 cup brown sugar 1/2 cup shortening 2 eggs -- well beaten 1 1/2 cups flour 1 1/2 teaspoons baking powder 1 teaspoon salt 1 teaspoon cinnamon 1 teaspoon vanilla **Topping** 6 tablespoons butter 1/4 cup evaporated milk 1/2 cup brown sugar 1 teaspoon vanilla 1 cup coconut 1 cup chopped nuts Pour water over oatmeal and let stand 30 minutes. Cream together sugars, shortening and eggs. Add the oatmeal. Blend in flour, soda, baking powder, salt, cinnamon and vanilla. Bake in 9 x 13-inch pan for 35 minutes in 350F. oven. (Or in 2 8-inch layer cake pans, greased and lined with waxed or parchment paper) **Topping** Cook butter, milk, sugar together for 3 minutes. Stir in vanilla, coconut and nuts. Spread hot on hot cake. (I always double the recipe if I am making a layer cake). Stir in the egg, water and vanilla. Add sifted dry ingredients, rolled oats and peanuts or chips. Drop from a teaspoon onto a greased baking sheet. Gradually blend in the sugar. Beat in the egg. Add the flour alternately with the milk, blending well. Drop the dough from a teaspoon onto lightly-greased cookie sheets, about 2 inches (5 cm) apart, keeping them round. Bake in a preheated moderate oven (375F/190C) for 15 minutes or until lightly browned around the edges. Cool on wire racks. Store in airtight containers. Makes about 3 dozen cookies.
