                 Donnybrook Farm's Goat Cheese Mozzarella

  1             gallon  cheese pasteurized milk
  2          teaspoons  citric acid powder
     1/4      teaspoon  Lipase powder -- optional
     1/4                rennet tablet -- dissolved in
     1/4           cup  cool water -- (chlorine-free)
  1           teaspoon  cheese salt -- optional

Start with 1 gallon of "cheese" pasteurized milk*, (see below).

Add 2 teaspoons citric acid powder, stir and slowly bring to 88F. Milk will
begin to curdle. (If you like Mozzarella with stronger flavor, add 1/4 
teaspoon Lipase powder with the citric acid.)

Add solution of 1/4 rennet tablet dissolved in 1/4 cup cool chlorine free
water.

You will now have "curds & whey".

Slowly heat to 105F., stirring often.  Scoop curds into microwavable bowl 
with a slotted spoon.  Press the curds together and pour off any whey.
Microwave on HIGH for 1 minute. Again drain off any whey.

Knead your cheese like dough till it cools. Wear rubber gloves, the cheese
will be HOT.

Microwave for 35 seconds and knead, one or two more times.  During this 
process the texture of the cheese will change from "grainy" to smooth and 
stretchy. When it will stretch like taffy it's done!

If you want to, add 1 teaspoon cheese salt* (see below) before the last
kneading.

Your Mozzarella is now ready to eat hot, or cool and grate.

I vacuum package and freeze mine!

*Pasteurizing Milk for Cheese:  heat milk to 145* in a non-aluminum pot and
hold at that temperature for 30 minutes.

*Cheese Salt:  Coarse "flake" salt that mixes easier. I use "Morton Coarse
Kosher Salt" available at most grocers.
