* Exported from MasterCook * Zucchini Pie Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Volume 6-07 July 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups zucchini -- grated 4 eggs -- lightly beaten 1 1/4 cups biscuit mix 1/2 cup onion -- chopped 1/2 cup oil 1/2 cup parmesan cheese 1 tablespoon dried parsley 1/2 teaspoon salt 1/2 teaspoon oregano Pre-heat oven to 350-F degrees. In a large mixing bowl, blend together the zucchini, eggs, biscuit mix, onion, oil, parmesan cheese, parsley, salt, and oregano. Pour the mixture into a 9-inch pie place and bake for 45 minutes. Exchanges: 1 Grain(Starch); 1 Lean Meat; 1/2 Vegetable; 5 Fat. * Exported from MasterCook * Zucchini-Lemon Muffins Recipe By : Serving Size : 12 Preparation Time :0:20 Categories : Volume 6-07 July 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups all-purpose flour 1/2 cup sugar 1/4 teaspoon salt 1 tablespoon baking powder 2 teaspoons grated lemon rind 1/4 teaspoon ground nutmeg 1 cup coarsely shredded zucchini -- (about 1 large) 3/4 cup milk 3 tablespoons vegetable oil 1 large egg -- lightly beaten Combine flour, sugar, baking powder, lemon rind and nutmeg in a large bowl and set aside. Combine grated zucchini with the milk, oil and egg; stir just until moistened. Make a well in the center of the dry ingredients; pour in zucchini mixture and stir just until everything's moistened. Preheat the oven to 400F degrees. Spoon batter into paper-lined (or greased) muffin pans, filling each about two-thirds full. Bake at 400 degrees F. for 20 minutes or until golden. Remove from pans immediately and cool completely on wire racks. Makes one dozen.
