Zucchini Pie
Recipe By :
Serving Size : 6 Preparation Time :0:00
Categories : Volume 6-07 July 2003
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 cups zucchini -- grated
4 eggs -- lightly beaten
1 1/4 cups biscuit mix
1/2 cup onion -- chopped
1/2 cup oil
1/2 cup parmesan cheese
1 tablespoon dried parsley
1/2 teaspoon salt
1/2 teaspoon oregano
Pre-heat oven to 350-F degrees.
In a large mixing bowl, blend together the zucchini, eggs, biscuit mix,
onion, oil, parmesan cheese, parsley, salt, and oregano.
Pour the mixture into a 9-inch pie place and bake for 45 minutes.
Serve warm.
This is really great either as a one-dish meal or served as a side dish,
sparked by a crunchy salad for contrast.

NOTES : Today's recipe is from an unnamed Recipe-a-Day member who obviously
knows what to do with excess zucchini from the garden. Whether you serve it
as a vegetarian main course or as a side dish, The Kitchen Staff believes
you will enjoy this recipe as a new method to utilize the versatile
abundance of the zucchini squash.
