  1 1/2           cups  frozen lemon juice -- thawed
     2/3           cup  jalapeno pepper -- minced
     1/2           cup  fresh cilantro -- chopped
  2             cloves  garlic

Combine all ingredients, stirring until well blended.
Cover and refrigerate at least 8 hours.

Serve with chilled black beans, corn and chopped red bell peppers over
raw greens.

                          No Cook Berry Tiramisu

  1                cup  softened mascarpone cheese
  1                cup  powdered sugar
     1/4           cup  sour cream
     1/4           cup  coffee liqueur
  2          teaspoons  pure vanilla extract
  36                    ladyfinger cookies
  1               pint  washed raspberries -- divided
     1/4           cup  grated bittersweet chocolate
  1                cup  sweetened whipped cream
                        or whipped topping

Beat the mascarpone, powdered sugar, sour cream, coffee liqueur and vanilla
until smooth. Set the mixture aside.

Crush or finely chop the ladyfinger cookies and set aside.

Set aside 6 raspberries for a garnish.

Using eight ounce dessert glasses or large goblets, layer the ingredients
evenly in each glass, starting with half of the mascarpone mixture, then
half the cookies, then half the raspberries, then the remaining mascarpone
mixture, the remaining cookie crumbs and the rest of the raspberries.

Top with the sweetened whipped cream, grated chocolate and reserved
raspberries.

Serve immediately or chill for up to 8 hours before serving.

NOTES : This cool summer dessert is quick and easy to make…it can be on
your table in less than 10 minutes. With no cooking involved it will also
help to keep your kitchen cool. It is also great made in advance which
makes it even easier on the host or hostess. We preferred raspberries with
our tiramisu, but you can use any summer berries or fruit. For a non-
alcoholic dessert, use a coffee flavored syrup instead of the liqueur and
reduce the sugar to 2/3 cup.

                    No Cook Cold Avocado-Tequila Soup

     1/2           cup  tightly packed fresh cilantro leaves
  1                     jalapeno pepper stemmed -- seeded and
                        coarsely chopped
     1/2           cup  lemon juice
     1/4           cup  tequila
  15            ounces  chicken broth -- fat
                        skimmed from top -- (1 can)
  2                     ripe avocados -- (about 1 pound)
                        peeled, pitted and coarsely chopped
     1/2      teaspoon  salt -- or to taste
  4                     lemon wedges -- (optional)
  1              small  tomato -- (optional)
                        cut into 1/4-inch dice

1. Place the cilantro and jalapeno in a blender or the work bowl of a food
processor. Process until finely chopped, scraping down the sides of the
bowl once or twice as necessary.

2. Add the lemon juice, tequila, chicken broth, avocados and salt, and
process until smooth. Refrigerate the soup until it is well chilled, about
1 hour. (It can be refrigerated up to 6 hours until ready to serve.)

3. Ladle the soup into 6 serving bowls and garnish each bowl with a lemon
wedge and a tablespoon or two of chopped tomato, if desired. Serve
immediately.

NOTES : Are you tired of the same old guacamole but still in love with
avocados? This soup is a wonderful alternative. It's rich and refreshing at
the same time - a wonderful way to begin a festive summer meal. The tequila
gives the avocado puree a nice edge.

                        Few chopped fresh chives

Grind the sesame seeds in a food processor (toast them first if you
prefer).

Add all the remaining ingredients & grind well. The mixture should be a
stiff dough consistency.

Pinch off small pieces & roll into balls. Flatten on a board with the
palm of your hand.

Lift off the board using a fish slice or spatula & place on a wire rack.
Leave in a warm place or in the sun to dry out.

                   No Cook Sicilian Green Tomato Sauce

     1/3           cup  toasted pine nuts
  1              pound  green tomatoes -- preferably with
                        some pink blush -- very finely chopped
     1/2           cup  extra virgin olive oil
  2              large  garlic cloves -- minced
     1/4      teaspoon  hot red pepper flakes
  1              pound  spaghetti
                        Salt and freshly ground black pepper
  24                    Fresh basil leaves -- torn into small
                        pieces

Preheat oven to 325 degrees F.

Toast pine nuts on a baking sheet until they are golden brown and fragrant,
12 to 15 minutes. Cool.

In a wide, shallow serving bowl, combine tomatoes, olive oil, garlic and
hot pepper flakes.

You can make this mixture 1 to 2 hours ahead and let stand at room
temperature. Do not add salt at this point as it will draw out the tomato
juice.

Bring a large pot of salted water to a boil over high heat.

Add pasta and cook until al dente. Just before spaghetti is ready, season
sauce generously with salt and pepper and stir in basil leaves.

Drain pasta and transfer to large serving bowl. Toss to coat with sauce.
Scatter with pine nuts on top.

Note :  You may freeze the sauce before you add the fresh basil for up to 6
months. When ready to use, thaw and add basil to sauce.

Place the garlic, tahini, lemon juice and vinegar in a blender.
Blend until the garlic is pureed.

With the motor running, slowly pour in the sesame and vegetable oils until
just blended.  Add salt and pepper to taste.

NOTES : Makes about 1 cup.

juice. Cover and store in the refrigerator.

Serve over steamed vegetables or in a sandwich; also makes a great dip.

                        Black pepper -- to taste
  16            ounces  dry pasta -- of your choice

1.  In a large bowl, stir together the tomatoes, garlic, red pepper and
basil. Drizzle with olive oil and season with salt and pepper. Mix well and
let stand for at least one hour at room temperature to blend the flavors.

2. Bring a large pot of lightly salted water to a boil. Add pasta and cook
until al dente, about 8 minutes. Drain and serve topped with sauce.
