* Exported from MasterCook * Twenty-four-Hour Wine and Cheese Omelet Recipe By :Bite of Bauer Serving Size : 8 Preparation Time :0:00 Categories : Volume 6-06 June 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large loaf Italian bread -- day old 6 tablespoons butter -- (90 mL) melted 3/4 pound Swiss cheese -- (375 g); shredded 1/2 pound Monterey jack cheese -- (250 g); shredded 9 slices Genoa salami -- chopped [thin slices] 16 eggs 3 1/4 cups milk -- (800 mL) 1/2 cup white wine -- (125 mL) 4 large whole green onions -- minced 1 tablespoon mustard -- (15 mL) 1/4 teaspoon pepper -- (1 mL) 1/8 teaspoon cayenne pepper -- (0.5 mL) 1 1/2 cups sour cream -- (375 mL) 1 cup grated parmesan cheese -- (250 mL) Butter two 9x13-inch (22x33 cm) baking dishes. Break the bread into small pieces and distribute evenly between the two pans. Drizzle with the melted butter. Sprinkle the cheeses and salami over the bread. Beat the eggs, milk, wine, onions, mustard and pepper. Pour over the bread/cheese layers. Cover the pans with foil. Refrigerate for up to 24 hours. Remove from the refrigerator 30 minutes prior to baking. Preheat oven to 325F (160C). Bake the omelet, covered, for 1 hour. Uncover; spread with sour cream and sprinkle the parmesan cheese over the top. Return to the oven and bake, uncovered, a further 10 to 15 minutes until brown.
