Iron Skillet Coffee Cake

3/4 cup butter
1 1/2 cups sugar
2 eggs
1 1/2 cups sifted all-purpose flour
1 pinch salt
1 teaspoon almond extract
Slivered almonds as desired
Sugar to sprinkle
Melt butter and add to sugar in a large mixing bowl.
Beat in eggs one at a time.Add flour salt & almond extract and mix well.
Another note here: you can substitute almond flavoring for the almond
extract but the results aren't nearly as good.
Pour batter into a large (9 or 10-inch) iron skillet which has been
lined with aluminum foil (there is no need to grease either the pan or
the foil).
Note : do not trim excess foil on sides.
Sprinkle the batter with slivered almonds and granulated sugar in
amounts that suit your personal taste.
Bake at 350 for 30-40 minutes (top should be golden brown).
Remove cake from pan and wrap tightly in excess foil when cooled.
Allow to cool completely before attempting to remove foil. If you try
to peel it off while the cake is still warm you will have a big mess
(a tasty mess but a mess indeed)!
