* Exported from MasterCook * Vegetarian Chopped Liver I Recipe By :Women's League Serving Size : 0 Preparation Time :0:00 Categories : Volume 6-01 Jan. 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 can peas -- (large can) 2 large onions -- chopped 1 vegetarian bouillon cube 2 tablespoons vegetable oil 1 slice pumpernickel bread -- toasted 2 hard-boiled eggs 4 ounces chopped pecans 1 1/2 teaspoons margarine Salt Heat the peas but do not boil. Drain and cool. Sauté onions in oil until soft. Dissolve bouillon cube in a small amount of boiling water until it is soft enough to crush (about 2 minutes). Mix crushed cube with onions and set aside. Place eggs, chopped pecans, peas, margarine and bread in food processor. Blend 2 to 3 minutes. Place ingredients in bowl and mix with onions. Refrigerate for 24 hours before serving. Tastes even better second or third day, and will keep for a week. Put about 1 1/2 cups of mix into 3 1-pint containers and label as Vegetarian Rice Mix. Store in a cool, dry place and use within 6 to 8 months. To Cook Vegetarian Rice: Combine 1 1/2 cups mix, 2 cups cold water and 1 tablespoon butter or margarine in a medium saucepan. Bring to a boil over high heat; reduce heat and cover. Cook for 15 to 25 minutes, until all liquid is absorbed. Makes 4 to 6 servings. Exchanges: 0 Grain(Starch). * Exported from MasterCook * Vegetarian Sausage Pudding - Vegan Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 6-01 Jan. 2003 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces vegetarian sausage 1 teaspoon margarine -- or oil 1 soft bagel -- torn into bits 1 apple -- cored and chopped 1 cup water 1 dash cinnamon In a frying pan, heat margarine or oil. Add sausage and fry until browned, chopping as it cooks. Add water and bring to boil. As soon as the water boils, turn heat down to simmer. Add bagel bits and stir well. Add chopped apple and stir well. Cook, stirring, until mixture becomes pudding-like. Sprinkle with cinnamon. Serve hot.
