* Exported from MasterCook * SOMEN NOODLE CHICKEN SALAD Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Salads Volume 2-3, Mar.'99 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked chicken or turkey 3 bunches Somen Noodles -- cook according to package 1 small -- very small or half, red cabbage, sliced and chopped 2 small cucumbers -- sliced 1 lb. fresh mushrooms -- sliced [Layer from Bottom to Top] Noodles Cabbage Mushrooms Cucumbers Top with Meat [Dressing] 3/4 cup oil (not olive oil) 1 1/2 T. Sesame Oil 9 T. Rice Vinegar (1/2 cup) 3 t. accent 3 t. salt 1 1/2 t. pepper Note: This is the original recipe but I usually cut the amount of salt and accent in half. Pour the dressing over just before serving and don't mix. I usually built this in a pretty glass bowl for the effect....also travels well if you carry the dressing separate. Good the next day also...even with the dressing.
