                        SOMEN NOODLE CHICKEN SALAD

   2      cups          cooked chicken or turkey
   3      bunches       Somen Noodles -- cook according to
                        package
   1                    small -- very small or half,
                        red cabbage, sliced and chopped
   2      small         cucumbers -- sliced
   1      lb.           fresh mushrooms -- sliced
                        [Layer from Bottom to Top]
                        Noodles
                        Cabbage
                        Mushrooms
                        Cucumbers
                        Top with Meat
                        [Dressing]
     3/4  cup           oil (not olive oil)
   1 1/2  T.            Sesame Oil
   9      T.            Rice Vinegar (1/2 cup)
   3      t.            accent
   3      t.            salt
   1 1/2  t.            pepper
Note:  This is the original recipe but I usually cut the amount of salt 
and accent in half.  Pour the dressing over just before serving and don't 
mix.  I usually built this in a pretty glass bowl for the effect....also 
travels well if you carry the dressing separate.  Good the next day 
also...even with the  dressing.

     1/2  cup           brown sugar
   1      Tablespoon    Cornstarch
     1/4  teaspoon      cinnamon
     1/4  cup           raisins
   1      Tablespoon    Margarine
   1      cup           water
   2      Tablespoons   lemon juice
In a small saucepan combine the brown sugar, cornstarch and cinnamon.  Add 
remaining ingredients stir, Heat until mixture boils and thickens. 
Stirring Occasionally.  Simmer about 10 minutes.
