  500            grams  flour
                        [just over a pound]
  100            grams  white wine
                        [approx. 1/2 cup]
  100            grams  extra virgin olive oil
                        [approx. 1/2 cup]
  10                    egg yolks
                        Salt
  400            grams  fresh cheese -- grated
                        [a little less than a pound]

Knead the flour with oil and a pinch of salt.
Roll out a very thin layer of the dough and line a baking dish
Roll out enough dough to cover the dish.

Beat the eggs with the cheese which has been finely minced in a
blender. Pour the mixture into the lined dish and cover with the dough.

Brush with egg yolks and bake for 1 hour 20 minutes.

  2                     oranges
  1                     lemon
  2               cups  sugar

Grind berries, orange and lemon rind and pulp together (I use
blender) add sugar and let stand overnight.

Simple and very very good.
