Pennsylvania Dutch Cracker Pudding

4 cups milk
2 eggs -- separated
1/2 cup sugar
2 cups coarse cracker crumbs
1 cup shredded coconut
1 teaspoon vanilla
3 tablespoons sugar
Scald milk in top of double boiler. Beat egg yolks and add 1/2
cup sugar. Add egg yolk mixture gradually to scalded milk. Stir
constantly. Allow to cook for one minute and then add cracker
crumbs and coconut. Stir until cracker crumbs are soft and
mixture is thick. Remove from heat and add vanilla. Pour into a
buttered baking dish. Spread with meringue made by beating 3
Tablespoons of sugar into stiffly beaten egg whites.
Bake at 350 degrees F. until the meringue is golden brown.
Serves : 6 to 8

Pumpkin Pancakes

1 cup flour
1/2 teaspoon baking powder
4 tablespoons sugar -- or to taste
1 teaspoon salt
1 teaspoon cinnamon
2 eggs -- lightly beaten
2 cups milk
1 teaspoon vanilla extract
2 pounds cooked pumpkin -- mashed
or pureed
Corn oil -- for frying
Sift together flour, baking powder, sugar, salt and cinnamon.
In a separate bowl, combine eggs, milk and vanilla. Pour into dry
ingredients.
Stir in pumpkin and blend well.
Heat corn oil in a heavy skillet or griddle.
Drop batter, 2 tablespoons at a time, into skillet and cook until
golden brown on each side.
Drain on paper towel.
Serves 4.
Note - Winter squash such as Hubbard, acorn or butternut, may be
substituted for pumpkin.

9 cups crispy rice cereal squares
1/2 cup peanut butter
1 cup semi-sweet chocolate chips
1 1/2 cups confectioners' sugar
In a saucepan over low heat, melt the chocolate; add peanut butter and
mix until smooth.
Remove from heat, add cereal and stir until coated.
Pour powdered sugar into large plastic bag, add coated cereal and
shake until well coated. Store in airtight container.
Makes 2 to 3 dozen
This recipe can be used as an appetizer or dessert.

1 cup creamy peanut butter
1 stick butter or margarine
2 cups chocolate chips
1 large box crispex cereal
1 pound powdered sugar
Melt peanut butter, butter or margarine and chocolate chips. Place
crispex in large bowl and pour melted mixture over. Stir. Place
powdered sugar in a large paper bag and drop the mixture in small
batches in powdered sugar. Shake and remove to a large pan or wax
paper to cool and dry.

Puppy Chow Snack Mix

1 box Crispix cereal
or any Chex Cereal
2 cups chocolate chips
1 stick margarine or butter
1 cup peanut butter
16 ounces powdered sugar -- (1 box)
In saucepan, or in the microwave, melt chocolate chips, margarine
and peanut butter. Pour cereal into large bowl. Pour melted mixture
over cereal to completely coat. Let cool. Place powdered sugar
into another large bowl or a paper grocery bag. Pour coated cereal
mixture into bowl or bag. Shake until completely coated.
If it seems too much mix to handle at one time, divide ingredients
in half and make it twice.
