1 cup diced tomato
1/4 cup diced green bell pepper
2 tablespoons sliced green onions
2 tablespoons chopped ripe olives
2 tablespoons chopped green chiles
2 teaspoons white vinegar
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
Corn tortilla chips
1/4 cup shredded sharp Cheddar cheese -- (1 ounce)
Combine first 8 ingredients.
Spoon 2 teaspoons vegetable mixture on each tortilla chip; divide
cheese evenly among chips.
Broil 6-inches from heat 1 minute or until cheese is melted.
Great for a snack or light lunch.
