6 thin beef steaks -- from top round
or shoulder
6 strips bacon -- diced
2 medium onions -- chopped
1 green bell pepper -- chopped
1 red bell pepper -- chopped, optional
1/2 cup parsley -- chopped
1/2 pound fresh mushrooms -- thinly sliced, optional
Salt -- to taste
Pepper -- to taste
Oil -- for frying
1 cup beef stalk -- or water
**Gravy**
4 tablespoons flour
Pan juices
1/2 cup sour cream
Pound the steaks with a mallet until they are one-eighth inch
thick.
Mix the bacon and vegetables.
Divide mixture into 6 portions and spoon onto the ends of the
steaks.
Roll up the steaks and secure with tooth picks or skewers.
Heat the oil in a frying pan. Sauté the steaks until brown.
Transfer to a 4 quart casserole and add about 1 cup beef stalk or
water.
Cover tightly and simmer about 60 minutes.
Remove steak rolls and discard tooth picks or skewers.
To make the gravy, add the flour to the juices in the casserole,
along with more stalk or water if necessary.
Stir well until smooth.
Add sour cream and heat gently, being sure not to boil.
Serves 6
