* Exported from MasterCook * Gazpacho Camino Real Recipe By :When the Good Cook Gardens Serving Size : 6 Preparation Time :0:00 Categories : Volume 5-07 July 2002 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large tomatoes -- peeled & chopped 1 large cucumber -- peeled & finely diced 1 green pepper -- seeded and chopped 2 mild green chiles -- chopped [fresh or canned] 46 ounces vegetable cocktail juice -- (1 large can) 1/4 cup red wine vinegar Salt and freshly ground pepper -- to taste 1/4 teaspoon ground cumin or Mexican seasoning *Condiments* Chopped green onions Sliced avocado Toasted pumpkin seeds Ice cubes Place the tomatoes, cucumber, pepper, chiles, vegetable juice, vinegar, salt, pepper and cumin in a large bowl. Mix all ingredients together in a bowl and marinate for 2 to 3 hours maximum. Heat grill and cook wings, basting with saved marinade until done.
