                              Red's Dry Rub

  1       11 ounce can  chili powder -- fine ground, light
  1         tablespoon  cayenne pepper
  2        tablespoons  black pepper
  4        tablespoons  garlic powder
     1/2           cup  lemon juice

Thoroughly coat all surfaces of the meat with lemon juice, and rub it 
in well. Combine all of the dry ingredients in a bowl, and sprinkle 
generously all over the meat, rubbing in well. Make sure that the meat 
is entirely covered. Store leftover rub in a tightly sealed container 
in the refrigerator.

                           Rhubarb Dessert Cake

  2               cups  half and half
  2               cups  sugar
  3               cups  rhubarb -- diced
  1                box  yellow cake mix

Mix cake as directed on box. Pour into greased 9x13-inch pan.

Mix cream, sugar and rhubarb together.  Pour over cake.

Bake at 350F for 1 hour. 

May be served with whipped cream.

  2 1/2           cups  vanilla wafers -- crushed
  1                cup  almonds -- toasted & ground
     1/2           cup  powdered sugar -- sifted
  2          teaspoons  cinnamon
  6             ounces  semi-sweet chocolate chips
     1/2           cup  pumpkin -- (canned)
     1/3           cup  coffee liqueur
     1/4           cup  powdered sugar -- sifted

* Note: Apple juice may be substituted for coffee liqueur if desired.

In medium bowl, combine vanilla wafer crumbs, ground almonds, the 1/2 cup 
powdered sugar, and cinnamon. Blend in chocolate, pumpkin, and coffee 
liqueur. Form into 1-inch balls.
Chill. Dust with remaining powdered sugar just before serving.

Yields 48 servings.

                 Rustic Rub - {Emeril's Rustic Seasoning}

  8        tablespoons  Paprika
  3        tablespoons  Cayenne
  5        tablespoons  Freshly-ground black pepper
  6        tablespoons  Garlic powder
  3        tablespoons  Onion powder
  6        tablespoons  Salt
  2 1/2    tablespoons  Dried oregano
  2 1/2    tablespoons  Dried thyme

Combine all ingredients and store in an air-tight container.

This recipe yields about 2 1/3 cups of Emeril's famous "Rustic Rub" 
seasoning.
