* Exported from MasterCook * Latin-Style Spice Rub Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Volume 5-05 May 2002 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup cumin 1/4 cup chili powder 2 tablespoons coriander seeds -- crushed 1 tablespoon cinnamon 1 tablespoon brown sugar -- packed 2 tablespoons salt 1 tablespoon red pepper flakes 2 tablespoons black pepper -- fresh ground Combine all the ingredients and grind to a powder in a spice mill, coffee grinder, or with a mortar and pestle. Store in a tightly seal jar in a cool, dark place. It will keep for about 6 weeks. Put into a shaker with large holes. Store in a cool dark place. Makes about 3 ounces. This rub is good on all types of meat.
