DESCRIPTIONS

Espresso Macchiato (ess-PRESS-o mock-e-AH-toe)
Macchiato is Italian for 'marked' or 'spotted', which describes the small 
dollop of milk foam added to a cup of espresso.

--> To make: Put 1 shot of espresso in a demitasse. Top with a dollop of 
foamed milk.

Espresso con Panna (ess-PRESS-o cone PA-na)
In this variation on a macchiato, a dollop of whipped cream (panna) 
replaces the foamed milk.

--> To make: Put 1 shot of espresso in a demitasse. Top with a dollop of 
whipped cream.

Caffe Mocha (caf-AY MO-kah)
A classic combination of espresso, chocolate and steamed milk.

--> To make: For whatever size you are making pour in enough good-quality 
chocolate syrup to just cover the bottom of the cup. Add 1 shot of 
espresso. Fill the cup almost to the rim with steamed milk. Top with a 
dollop of whipped cream. Lightly sprinkle cocoa powder over the top.

Caffe Latte (caf-AY LAH-tay)
The most popular morning coffee drink.

--> To make: 1 shot of espresso. Fill the cup almost to the rim with 
steamed milk. Top off with about 1/4-inch (.5cm) of foamed milk.

Cappuccino (cap-uh-CHEE-no)
Named for the Catholic orders of Capuchin friars, whose hooded robes 
resemble the drink's cap of foam.

--> To make: 1 shot of espresso. Fill the cup halfway with steamed milk. 
Top off above the rim with foamed milk.

Caffe Americano (caf-AY a-mer-i-CAH-no)
An Italian approach to typical American-strength coffee, producing a full-
flavored yet milk cup.

--> To make: 1 shot of espresso. Fill with water just off  the boil, 1 
ounce (30 mL) short of the cup's capacity.

A CHOICE OF SIZES:

Espresso drinks may be made in a range of sizes, depending on how much 
you want to drink and on the strength of coffee flavor you prefer.

Short - a basic 8-ounce (250-mL) cup, calling for 1 shot of espresso.

Tall - a 12-ounce (360-mL) cup or glass. Using 1 shot of espresso 
yields a milder coffee flavor than in a short; 2 shots yields a stronger 
coffee presence, preferred by some people.

Grande - a 16-ounce (500-mL) cup or glass, calling for 2 shots of 
espresso and yielding drinks of the same strength as a short.

  2        tablespoons  salt
  2        tablespoons  sugar
  2        tablespoons  brown sugar
  2        tablespoons  ground cumin
  2        tablespoons  chili powder
  2        tablespoons  freshly cracked black pepper
  1         tablespoon  cayenne pepper
  4        tablespoons  paprika

Simply mix together. I usually double or quadruple the recipe since it 
is used liberally.
