                        Welsh Chicken and Mace Pie

  1 1/2         pounds  cooked chicken -- (700 g)
  4             ounces  cooked tongue -- (125 g)
  1                     onion
  4                     leeks
  3             stalks  celery
  2             ounces  butter -- (50 g)
  1           teaspoon  ground mace -- (5 mL)
  1         tablespoon  chopped parsley -- (15 mL)
     1/2          pint  chicken stock -- (300 mL)
                        Salt and pepper
  12            ounces  pie pastry -- (350 g)
  1                     egg

Preheat oven to 400F (200C / Gas 6).

Chop chicken into medium-size pieces.
Cut the tongue into strips.
Peel and thinly slice the onion.
Trim leeks, then cut into thin slices.
Trim and finely chop the celery.
Melt butter.

Put chicken, tongue and prepared vegetables in a bowl with mace, parsley
and butter; mix well.
Place in a large pie dish and add stock and seasoning.

Roll out dough and place on dish.
Press edge to dish to seal.
Lightly beat the egg and brush over the dough.

Bake for 40 minutes or until the pastry is golden.

Serve immediately with mashed potatoes.

Makes 6 servings.
