Categories : Volume 4, Jan. '99 Cheese
                Cottage Cheese Ground Beef
                Main Dishes
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup creamed cottage cheese or cream cheese
1/4 cup parmesan cheese -- grated
1 pound ground beef -- cooked and drained
   1 teaspoon dried oregano
     1/2 teaspoon dried basil
   6 ounces tomato paste
1 cup mozzarella cheese -- shredded
   1 cup milk
     2/3 cup Bisquick® baking mix
   2 eggs
   1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Heat oven to 400F. Grease pie plate, 10 x 1 1/2 inches. Layer cottage
cheese and Parmesan cheeses in plate. Mix beef, herbs, paste and 1/2
cup mozzarella: spoon on top. Beat milk, baking mix, eggs, salt and
pepper 15 seconds in blender on high or 1 minute with hand beater. Pour
into plate. Bake until knife inserted between center and edge comes out
clean, 30 to 35 minutes. Sprinkle with remaining mozzarella.
6 servings. ( unless it's teenagers, then it might be 3, tops)
If you have herbs growing feel free to triple or quadruple the amount
and use them. The lasagne is good with canned beans, drained, dressed
with a vinaigrette, and a few chopped onions.
For dessert, grab the pancake mix, make the recipe thinner than called
for, make crepes, fill with drained canned fruit, top with ice cream or
jelly or jam heated and thinned with water, fruit juice, or white wine,
or make bisquick shortcakes and do the same thing.
