* Exported from MasterCook * Date Rum Balls Recipe By :Pillsbury - Cookies Galore Cookbook Serving Size : 48 Preparation Time :0:00 Categories : Volume 4-12 Dec. 2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup margarine or butter 1 8 ounce pkg. chopped pitted dates 1/2 cup packed brown sugar 1 egg 2 cups crispy rice cereal 1/2 cup coconut 1/2 cup chopped nuts 1 teaspoon rum extract 2/3 cup coconut In medium saucepan, melt margarine over Medium heat. Stir in dates and brown sugar. Remove from heat. Stir in eggs. Return to heat. Continue cooking over Medium heat until mixture comes to a full boil, stirring constantly. Stir in rice cereal, 1/2 cup coconut, walnuts and rum extract. Cool for 5 minutes or until mixture is cool enough to handle. With buttered hands, shape level tablespoon of date mixture into balls. Roll balls in 2/3 cup coconut. Makes about 48 balls. Stir in flour, oatmeal, flour, salt and soda alternately with sour milk. Roll very thin and cut into rounds. Bake at 350ºF for 10 minutes.
