  2                     ripe mangoes
  6        tablespoons  fresh cilantro -- chopped
                        plus whole leaves for garnish
  4                     fresh tuna steaks -- 6 ounces each
About 1 hour before serving, peel the mangoes with a sharp knife. Cut the 
flesh away from the pit, dice it into 1/4-inch pieces, and put it in a 
small bowl.  Add the chopped cilantro and a pinch of salt and mix well. 
Chill for 30 minutes.
Lightly press 1/2 teaspoon butcher - grind black pepper into one side of 
each tuna steak. Sprinkle lightly with salt. Place the fish, pepper side 
down, in a large non-stick skillet. Cook on both sides over medium - high 
heat until the fish is seared on the outside but still pink in the 
center.
Cut the tuna on the bias with a sharp knife into 1/2 inch slices.
Mound mango relish in the center of each plate. Arrange the tuna slices, 
overlapping to form a circle around the relish. Garnish with fresh 
cilantro leaves.

  1            package  instant chocolate pudding mix
  2               cups  milk
  1                     white regular cake mix -- (not jiffy size)
                        chocolate chips -- as desired
                        walnuts -- as desired
Whip chocolate pudding mix and milk, add white cake mix, beat. Pour into 
a greased 9 x 13 inch pan.
Sprinkle with chocolate chips and walnuts as desired.
Bake at 350 degrees for 25 minutes, or until tests done.
Versions : instead of chocolate pudding & chocolate chips, use pistachio 
pudding and butter brickle chips, or french vanilla cane, french vanilla 
pudding mix with cherry chips (very neat for valentines day).
Anything goes so use your imagination and enjoy!

  1           Teaspoon  Baking Soda
  1           Teaspoon  Cream Of Tartar
  1                Cup  Butter
  1                Cup  Vegetable Oil
  1                Cup  Granulated Sugar
                        Plus Extra For Stamping
  1                Cup  Powdered Sugar
  2              Large  Eggs
  1           Teaspoon  Vanilla Extract
                        Granulated Sugar
Preheat oven to 375. Line baking sheets with kitchen parchment paper or 
grease lightly.
In medium bowl, mix together flour, soda, and cream of tartar. In a large 
bowl, beat butter, oil and sugars until completely blended and mixture is 
creamy. Add eggs and vanilla and beat well. Stir in dry ingredients until 
well blended.
Drop dough, using a cookie scoop or level measuring tablespoonfuls, on 
prepared baking sheets. Flatten each ball to 3/8 inch thickness using a 
cookie stamp or the bottom of a pretty glass dipped in granulated sugar. 
Bake 10-12 minutes or until cookies are lightly browned around the edges. 
(Do not over bake). Transfer cookies to wire racks to cool.
Makes about 6 1/2 dozen cookies.

  1 1/2            cup  boiling water
  125            grams  butter -- chopped (1/4 pound)
  2          teaspoons  finely grated orange rind
  1                cup  firmly packed brown sugar
  2                     eggs -- lightly beaten
  1         tablespoon  orange juice
  1 1/2           cups  self raising flour
     1/2           cup  chopped walnuts
                        ICING:
  1                cup  icing sugar mixture 
  1         tablespoon  butter  
  2          teaspoons  finely grated orange rind
  1         tablespoon  orange juice
Grease 20 cm x 30 cm lamington pan, line base with baking paper. (This is 
a rectangular pan measuring (for this recipe) about 8 inches by 12 inches 
and has sides that are approximately 1 1/2 inches high. H.)
Combine apricots and water in heat-proof bowl, mix well, stand for 10 
minutes, drain well.
Beat butter, rind and sugar in small bowl with electric mixer until light 
and fluffy. Gradually add eggs, beating well after each addition. Stir in 
apricots, juice and sifted flour, stir until just combined. Pour mixture 
into prepared pan.
Cook in moderate oven, 180 degrees celcius (350F) for about 30 minutes. 
Stand slice in pan for 10 minutes, turn out onto wire rack to cool.
ICING :
Combine icing sugar mixture, butter, rind and juice in heat-proof bowl. 
Stir over a pan of simmering water until icing is a smooth consistency.
Spread over slice sprinkle with nuts, serve cut into squares.
