1/4 cup canola oil -- (60 mL)
1/4 cup melted butter -- (60 mL)
5 garlic cloves -- finely minced
1 small lemon -- juice of
2 teaspoons hot sauce -- (10 mL)
[your favorite]
1 teaspoon salt -- (5 mL)
6 large potatoes -- scrubbed and
cut into 6 wedges each Preheat oven to 375F (190C). Place all ingredients except potatoes in a lidded jar and shake
vigorously. Place potato wedges in a 9- x 13-inch glass pan. Pour sauce over
potatoes and toss to coat. Bake, uncovered, in a 375F (190C) oven until browned and crisp
outside, tender inside. This will take about 45 minutes, depending
on the size of the potatoes. Turn the potato wedges several times
during the roasting. These potatoes will have considerable heat. They're good with a
