3 cups sliced potatoes
3/4 cup leeks -- chopped
1/2 cup onion -- chopped
1 Tbsp. parsley
1 tsp. salt
1/4 tsp. nutmeg
2 Tbsps. butter
2 cups chicken broth
1 cup heavy cream
1 cup milk
Chopped chives Put all ingredients except cream, milk and chives in a saucepan. Cook
until potatoes are tender. Put cooked mixture into a blender and blend
until smooth. Pour into a large bowl and stir in cream and milk. Cover
and refrigerate several hours or overnight. Description : "Cold potato soup for hot days"
