Serving Size : 12 Preparation Time :0:00 Categories : Volume 4-9 Sep. 2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup self raising flour -- (125 g/4 oz) [cake flour] 1 cup wholemeal self raising flour -- (250 mL) 1/2 teaspoon bicarbonate of soda -- (2 mL) [baking soda] 3 1/2 ounces quick rolled oats -- (100 g) 2 ounces soft brown sugar -- (55 g) 6 ounces chopped dates -- (185 g) 1 egg 2 tablespoons vegetable oil -- (25 mL) 3 ounces golden syrup -- (90 g) 10 fluid ounces skim milk -- (310 mL) All the muffin recipes from this book are cooked in 200 degrees celcius ovens or for your guys over there (400 F/Gas 6), with a light spray of cooking oil in the muffin tins. Sift 1 cup (125g/4 oz) self raising flour (cake flour) and 1 cup wholemeal self raising flour with 1/2 teaspoon bicarbonate of soda into a large bowl. Stir in 100g/3 1/2 ounces quick rolled oats, 55g/ 2 oz soft brown sugar and 185g/ 6 oz chopped dates. Make a well in centre. Beat together 1 egg, 2 tablespoons vegetable oil, 90g/ 3 oz golden syrup and (310 ml/ 10 fl oz) skim milk in jug. Pour into the dry ingredients and stir with a large metal spoon until just combined. The mixture will look lumpy. Do not overmix. Spoon into the tin. Bake for 18 minutes, or until well risen and golden. Leave in tin for 5 mins before turning onto a wire rack to cool.
