* Exported from MasterCook * Upside-Down Strawberry Cake Recipe By :Simple and Delicious Desserts Serving Size : 12 Preparation Time :0:00 Categories : Volume 4-7 July 2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- **Strawberry Preparation** 2 medium eggs 375 grams light cream cheese -- (12 oz.) 80 milliliters all-purpose flour -- (1/3 cup) 300 grams frozen strawberries -- thawed (10 oz.) 30 milliliters clover honey -- (2 tbsp.) [optional] **Cake** 2 medium eggs 375 milliliters granulated sugar -- (1 1/2 cups) 125 milliliters soft margarine -- (1/2 cup) 150 milliliters all-purpose flour -- (2/3 cup) 20 milliliters baking powder -- (4 tsp.) 150 milliliters ground almonds -- (2/3 cup) 10 milliliters almond extract -- (2 tsp.) **Garnish** 10 strawberries -- sliced 80 milliliters blueberries -- (1/3 cup) **Strawberry Coulis** 300 grams frozen strawberries -- thawed (10 oz.) 15 milliliters clover honey -- (1 tbsp.) 125 milliliters unsweetened apple juice -- (1/2 cup) **Strawberry Preparation** Preheat oven to 180C (350F). In a large bowl, mix eggs, cheese and flour. Add strawberries and honey, mix gently with a spatula. Pour into a 23 cm (9-inch) greased crowned cake mold; put aside. **Cake** In a food processor or with a mixer, mix all cake ingredients: eggs, sugar, margarine, flour, baking powder, ground almond and almond extract. Beat until mix is smooth, 2 to 3 minutes. Pour cake mix over strawberry preparation and bake in oven for about 45 to 55 minutes. Let cool down for 30 minutes and turn out cake. Garnish with strawberries and blueberries. **Strawberry Coulis** In a saucepan, simmer strawberries, honey and apple juice for 2 minutes. In a food processor or with a mixer, mix coulis preparation into a puree; strain. Garnish upside-down cake with strawberry coulis and serve. Use cranberry sauce or a combination of cranberry sauce and applesauce as a filling for sweet rolls and coffee cake. 2. Cranberry Icing - add whipped cranberry sauce to standard recipe for butter icing and mix to a spreading consistency. Cut cookies in interesting shapes. Bake and cool. Decorate with the cranberry icing. 3. Add chopped fresh cranberries to Waldorf salad. 4. Place drained pear or peach half on lettuce and fill the center with whole cranberry sauce. 5. Add sweetened, chopped cranberries to vanilla pudding. 6. Cranberry-Apple Pie - use equal amounts of apples and cranberries; proceed as with regular apple pie. 7. Cranberry Upside-Down Cake - substitute whole cranberry sauce for pineapple slices and proceed as usual. 8. Cherry-Cranberry Cobbler - use cherry cobbler recipe but substitute cranberries for half of the cherries. 9. Applesauce-Cranberry Cake - use applesauce cake recipe but substitute cranberry sauce for all or at least 2/3 of the applesauce. 10. In a meat loaf, substitute cranberry sauce for the liquid called for in the recipe. 11. Add 1/2 to 1 cup of cranberries to a banana bread/cake recipe.
