(too long ago to remember) Serving Size : 16 Preparation Time :0:00 Categories : Volume 4-06 Jun 2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cans whole green chilies -- (3-oz size) 1 pound Monterey Jack cheese -- shredded 1 pound Longhorn (mild) cheddar cheese -- shredded 2 cups evaporated milk 4 eggs -- slightly beaten 4 tablespoons flour 2 cups tomato sauce 2 teaspoons chile powder -- optional 1 teaspoon cumin -- optional 1/2 teaspoon cayenne -- optional Devein and remove seeds from chilies. Place half of them in a 9x13 pan bottom. Layer cheeses over chiles. Using small amount of the milk make a smooth paste with the flour. Mix with remaining milk and eggs. Layer remaining chilies over cheese. Pour egg and milk mixture over chilies. Bake at 350 degrees for 20 minutes. If desired mix optional spices into tomato sauce while baking. After 20 minutes, remove pan from oven and pour tomato sauce over top. Bake 15 minutes longer. Remove from oven and let cool somewhat so that melted cheese can set up a bit. NOTES : Gloppy, rich (not low cal), but delish! Good company or potluck dish. Italian seasoning 1 tbsp. chopped garlic 1 1/2 tsp. herbal salt seasoning 1/4 cup oil 3 medium ripe tomatoes -- sliced Put cooked pasta in 9x13 pan. Pour eggs, milk, cheese, garlic, oil and seasoning mixture over pasta. Put sliced tomatoes on top. Bake until slightly brown and firm to the touch. Bake at 350°F for 1 1/4 hours. Add onion. Cover loosely. Cook on high for 3 minutes. Stir. Cook 2 to 3 minutes more. Stir. Drain. Stir in rest of ingredients (through pepper). Wrap 4 tortillas in a damp tea towel. Microwave 45 seconds on high. Put 1/3 cup meat mixture in center of tortilla, roll up and place seam side down in pan. Soften the other tortillas and fill. Cover with sauce. Cook on high for 7 to 9 minutes. Sprinkle with additional shredded Cheddar cheese (1/4 to 1/2 cup) and sliced black olives (optional). Cook another 1 to 2 minute to melt cheese. Dot with sour cream if desired. SAUCE : Mix sauce ingredients and cook, covered, on high for 4 to 6 minutes. *Jones Family Reunion Cookbook (1993): Nancy B. Jones.
