* Exported from MasterCook * Health Bread Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Volume 4-05 May 2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups all-purpose flour 1 cup whole wheat flour 2 packages dry yeast 1 cup quick cooking rolled oats 1 cup whole bran cereal 1 cup raisins 2 1/2 cups boiling water 1 1/2 cups cream style cottage cheese 2 tablespoons shortening 2 teaspoons salt 1/2 cup maple syrup Mix thoroughly 2 cups all-purpose flour, whole wheat flour and yeast. In another bowl, combine next 8 ingredients. Stir until shortening dissolves and mixture cools. Add to dry ingredients in first bowl and beat with mixer for 3 minutes. By hand, stir in remaining flour to make a moderately stiff dough. Turn out on lightly floured board and knead until smooth and elastic. Place in a greased bowl and let rise until doubled in bulk. Punch down and divide into three parts. Let stand for 10 minutes. Shape into loaves, cover and let rise 45 minutes to an hour. Bake at 375 deg. for 45-55 minutes. Remove from pans and place on cooling rack. Brush loaves with butter for a soft crust. Note : Any dried fruit or nuts may be added. Heat the oil and cook the onion without browning until it is transparent -- 1/2 cup canned cactus pieces, drained and rinsed 1/2 small tomato, chopped 1 chili serrano 2 eggs Salt to taste *(Eggs scrambled with nopal cactus pieces) Add the cactus pieces, tomato, and chili and fry the mixture for about 5 minutes, stirring from time to time. Beat the eggs lightly together with the salt and stir them into the mixture. Keep stirring until they are set. Serve at once with hot tortillas. Her note: Of course, if you are fortunate enough to have the fresh nopales, so much better; just cook them as instructed on page 24 (her book). Her notes on preparation: Always buy the smallest and thinnest joints; the thicker and darker in color, the less delicate they are to eat. Scrape off the thin, sharp thorns from around the rim and sides of the nopal but do not remove all the green outer layer. Cut them into small pieces, less than 1/2-inch, and cook them in well-salted water until they are tender.
