                     Fresh Strawberry Banana Omelets

  1                cup  fresh strawberries -- hulled and sliced
  1                     banana -- sliced
  1 1/2    tablespoons  sugar
     1/4      teaspoon  grated lemon peel
  1         tablespoon  fresh lemon juice
  4                     eggs
     1/4      teaspoon  salt
     1/4           cup  water
  2        tablespoons  butter -- divided
Combine strawberries, banana, sugar, lemon peel and juice in medium bowl; 
mix lightly.  Cover; let stand 15 minutes.
Meanwhile, mix eggs, salt and water with fork in small bowl.
Heat 1 tablespoon butter in 8-inch skillet over medium-high heat until 
just hot enough to sizzle a drop of water. Pour in half of egg mixture 
(about 1/2 cup).  Mixture should set at edges at once.
With back of pancake turner, carefully push cooked portions flow to 
bottom. Tilt pan to hasten flow of uncooked eggs. Slide pan rapidly back 
and forth over heat to keep mixture in motion and sliding freely.
While top is still moist and creamy-looking, spread 1/2 cup fruit mixture 
over half of omelet. With pancake turner, fold in half, turn onto heated 
platter.  Keep warm.
Repeat with remaining egg mixture. Top with remaining fruit mixture.

                   Fruit Salad with Honey Lime Dressing

  10            ounces  mandarin oranges in juice -- drained
                        [one 284-mL can of orange sections]
  2               cups  halved strawberries -- (500 mL)
  2               cups  cubed melon -- (500 mL)
                        [honeydew or cantaloupe]
  2             medium  bananas -- sliced
                        **Honey Lime Dressing**
  3                     eggs -- well beaten
     1/2           cup  liquid honey -- (125 mL)
     1/4           cup  lime juice -- (50 mL)
  1                cup  dairy sour cream -- (250 mL)
Combine the mandarin orange sections, strawberries and melon.  Add 
bananas and toss well. Cover the bowl and chill.
Makes 6 cups (1.5 L).
Honey Lime Dressing
Combine the eggs, honey and lime juice in a saucepan. Cook and stir over 
low heat until the mixture comes to a boil and thickens. Cool then fold 
in the sour cream. Chill.
Makes 2 cups (500 mL).
Just before serving pour the dressing over the chilled fruit. Toss until 
the fruit is well coated.
This can be varied by using other seasonal fruits.
Microwave method for dressing: Combine eggs, honey and lime juice in a 
medium-size microwave bowl.  Microwave at 75% power for 5 to 6 minutes, 
until mixture just comes to a boil and thickens. Cool; fold in sour 
cream.
Preparation time: 15 to 20 minutes.
