* Exported from MasterCook * Quick Sweet and Sour Chicken Chunks Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 4-1 Jan. 2001 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup instant rice 1 12 ounce pkg. frozen chicken nuggets -- breaded 1 pound can unpeeled apricot halves -- drained 1 6 ounce pkg frozen pea pods 3/4 cup bottled sweet and sour sauce In medium saucepan, bring 1 cup water to boil. Stir in 1 cup quick rice. Cover and remove from heat. Let stand for 5 minutes. Microwave or bake chicken nuggets according to pkg. directions. Meanwhile, in medium saucepan, stir together apricots, frozen pea pods and sweet and sour sauce. Heat. Add cooked chicken. Serve rice around edge of platter or plates and chicken mixture in middle. Stir together warm water, sugar, oil and salt. Add to flour mixture. Add egg. Beat at Low speed to mix, 30 seconds. Scrap bowl. Beat for 3 minutes at High speed. using spoon, stir in 1 cup more flour. Cover and let rise to double for 30 minutes. Spoon into 12 greased muffin cups, 2/3 full. Grease a 10-inch pie pan or quiche pan and spread cheese over bottom. Pour blended mixture over cheese and bake at 350 degrees for 45 minutes. Filling will puff slightly and be golden brown on top. Variations : Broccoli Quiche: Layer 1/2 cup cooked broccoli over cheese. Add 1/2 teaspoon Tabasco pepper sauce to ingredients in blender. Ham Quiche: Layer 1/3 cup cubed ham and 1 sliced green onion over cheese. Bacon Quiche: Scatter 4 slices crisply cooked and crumbled bacon over cheese. Serves 4 to 6.
