                          Savory Crab Cheesecake

     3/4           cup  chopped onion (about 1 medium)
  1              clove  garlic, minced
  1         tablespoon  butter or margarine
  1          container  (15 oz.) light Ricotta Cheese
     1/2           cup  half-and-half or light cream
     1/2           cup  Dijon or country-style Dijon mustard
  2        tablespoons  all-purpose flour
  2                     eggs
  1            package  (6 oz.) frozen crab meat, thawed or 1-1/2
                        cups shredded
                        crab-flavored surimi seafood
     1/2           cup  thinly sliced green onions
     3/4           cup  (3 oz.) Shredded Parmesan Cheese, divided
  1           teaspoon  finely chopped fresh dill weed
                        Assorted crackers
Preparation Time: 30 minutes; Baking Time: 40 minutes
In small skillet, cook onion and garlic in butter about 5 minutes or 
until tender; cool.
With electric mixer, blend Ricotta cheese, half-and-half, mustard and 
flour until smooth. Add eggs, one at a time, blending until smooth. 
Stir in crab meat, green onions, 1/2 cup Parmesan cheese, cooled onion 
mixture and dill. Pour batter into lightly greased 9-inch springform 
pan; sprinkle with remaining 1/4 cup cheese.
Bake at 350°F 40 minutes or until center is set. Cool on wire rack to 
room temperature; chill. Let stand at room temperature 30 minutes 
before serving. Serve as a spread on crackers.

  1       (8 ounce) package  cream cheese, softened
  2             cloves  cloves garlic, minced
     1/2      teaspoon  prepared mustard
     1/2      teaspoon  Worcestershire sauce
     1/4           cup  chopped parsley
     1/4           cup  chopped fresh dill weed
     1/4           cup  chopped fresh basil
     1/4           cup  chopped black olives
  1 1/2    tablespoons  lemon juice
Combine all the ingredients and mix well. Refrigerate in a mold for 
at least 2 hours.  Makes 2 cups.

                           Sesame-Cheese Spread

  2               cups  shredded sharp cheddar cheese
  2       (3-ounce) packages  cream cheese, softened
     1/4           cup  toasted sesame seeds
     1/4           cup  milk
  1           teaspoon  soy sauce
     1/2      teaspoon  dried or ground thyme
     1/2      teaspoon  salt
Mix all the ingredients in a blender or food processor until smooth. 
Scoop the spread into a serving bowl, cover, and refrigerate for at 
least 4 hours.  Remove from the refrigerator at least 1 hour before 
serving and let it stand at room temperature.  Serve with crackers or 
toast.
Yield: 2 cups

  1               dash  liquid smoke flavoring
Blend cream cheese, Cheddar cheese and liquid smoke in a small 
mixing bowl, cover and refrigerate for at least 1 hour. Serve at 
room temperature.

Saute 1/2 pound chicken livers and let them get 'cooked and almost 
crispy'. Mince finely or blenderize. Mince 2 green onions and add to 
livers (don't cook). Let 1/2 block of cream cheese come to room 
temperature and when soft, add the livers and onions.
Stuff jumbo black olives with a sliver of fresh jalapeno then as much 
of the cream cheese mix as you can get in.
Serve at room temperature.
I refused to make giblet gravy for Christmas dinner and had the 
giblets left, this was what I came up for them. From now on, this 
will be the way I use 'innards'. I'd also used the neck bones and 
picked meat off the neck, so the liver ingredient can be adjusted 
however you like them best.

  350                g  yam -- sliced
  3                     salted egg yolks
  150                g  sweet Nien Ko (a sticky, Chinese New Year 
                         cake)-- cut into thin strips
  2                     pandan (screwpine) leaves -- knotted
                        Seasoning:
     1/4           tsp  salt
  2               tbsp  sugar
  1               tbsp  shortening
  1               tbsp  wheat starch or Tang Mien flour
  20            pieces  spring roll wrappers (available from
                        supermarkets)
                        Corn flour mixture:
  1               tbsp  corn flour
  1               tbsp  water
                        Oil for deep frying
STEAM yam slices and pandan leaves until cooked, then mash. Combine 
mashed yam with seasoning, mixing well. Steam the salted egg yolks 
for 10 minutes. Use a cleaver to flatten the yolks then cut into thin 
strips. Place 1 tablespoon yam paste on a piece of spring roll 
wrapper, top up with a strip of Nien Ko and a strip of salted egg 
yolk. Roll up spring-roll style, sealing with some corn flour 
mixture. Deep fry in hot oil until golden brown. Dish out and drain 
well before serving.
