1/4 cup green onion -- sliced
1/4 cup red pepper (roasted or regular) -- diced
1/8 cup pickled jalapenos -- diced
3 cloves garlic -- minced
1/2 cup Mexican cheese blend -- shredded
4 turns fresh ground pepper
3 Tablespoons jalapeno juice
1/4 teaspoon salt
1 Tablespoon Essence*
2 12 oz cream cheese -- whipped
tortillas Mix cream cheese with Mexican cheese, garlic, Essence, salt and pepper.
Add jalapeno juice, 1 Tbs. at a time until mixture is smooth. It's
easier if the cream cheese is at room temp. Warm one tortilla in the microwave for about 10-15 seconds, just to make
pliable. On that tortilla, spread about 2 - 3 Tbs. cream cheese mix. On
lower 2/3, sprinkle with 1 Tbs. green onion, 1-Tbs. red pepper and about
1/2-Tbs. jalapeno, to taste. Starting with lower edge, start rolling up, firmly but not tightly. Wrap
roll in plastic wrap. Continue with rest tortillas. Refrigerate
overnight for best results. Unwrap and slice into 1/4 slices. Serve with salsa. NOTES : * Can be omitted Use flavored tortillas for color and/or flavor. Contributed to the FareShare Gazette by Robin; 19 November, 2000.
