1 3/4 cups King Arthur All purpose Flour
1 3/4 cups Hodgson Whole Wheat Flour
3 tablespoons toasted wheat germ
3 tablespoons toasted wheat bran
3 tablespoons old fashioned oats
1 tablespoon dark brown sugar -- packed
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons butter -- chilled
2 cups buttermilk Preheat oven to 425 degrees. Combine dry ingredients, add butter. Rub in
butter with fingers until well mixed. Make a well in the middle of the
flour mixture add buttermilk. Working quickly, mix with fingers, pulling
flour into the middle, DO NOT OVER MIX! Knead very lightly on lightly
floured surface. Shape into a round, with a serrated knife, bless the
loaf and cut a cross from side to side, poke 4 holes between the cuts
(to let the leprechauns out). Bake on lightly floured baking sheet for
40 minutes or until bread sounds hollow when tapped on the bottom. rap bread in a tea towel. Cool
