* Exported from MasterCook * Festive Fillets (diabetic) Recipe By :A Taste of Home Dec./Jan. 1999 Serving Size : 4 Preparation Time :0:00 Categories : Volume 3-10 Oct. 2000 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 envelope brown gravy mix 4 1/2 ounces sliced mushrooms -- drained [1 jar] 2 tablespoons prepared horseradish 4 beef tenderloin fillets -- 5 oz each 1/8 teaspoon pepper Prepare gravy according to package directions; add mushrooms and horseradish. Set aside and keep warm. In non-stick skillet, cook fillets over medium high heat until meat reaches desired doneness (about 10-13 minutes for medium), turning once. Season with pepper. Serve with gravy. Nutritional Analysis: One serving equals 268 calories. 714 mg sodium. 88 mg cholesterol, 7 gr. carbohydrate, 88 gm. protein, 11 gm. fat. Diabetic Exchange: 4 lean meat, 1/2 starch. EDITOR'S NOTE: Fillets can be baked. First brown in skillet for 1 minute on each side, then transfer to an 8-in. square baking pan. Bake uncovered at 350F for 10-20 minutes or until meat reaches desired doneness. Fill cup cake pans 2/3 full. Bake 25 minutes at 375 F. To make Spooks, turn cup cakes upside down. Place a dab of icing in the center, and set whole California dried fig upright with the stem standing erect at the top. Let stand until firm, then ice the whole thing with soft white butter icing. In a large bowl, cream butter and sugar with an electric mixer. Beat in egg and vanilla. Add baking powder, spice, and flour one cup at a time mixing after each addition. The dough will be very stiff; blend last flour in by hand. Do not chill dough. To tint with icing color, add small amounts until desired color is reached. Divide dough into 2 balls. On a floured surface, roll each ball into a circle approximately 12 inches in diameter. Dip Wilton "Jack-O- Lantern Cutters" in flour before each use. Place half the cookies on cookie sheets. Place 1 tablespoon filling on cookie. Cut eyes and mouth from remaining cookies. Place on top of filling. Press to seal edges. Bake for 12 to 15 minutes or until lightly browned. Mix in cereal. Add all remaining ingredients except noodles. Cover and bake at 325° for 2 to 2 1/2 hours or until meat and vegetables are tender. Serve over noodles if desired. Place in a slow cooker. Combine soy sauce, bouillon and spices; pour over roast. Add water to almost cover roast. Cover and cook over LOW heat 10 - 12 hours or until meat is very tender. Remove meat from broth; shred with a fork. Serve on bread or rolls. Add eggs; beat until fluffy. Combine flour, baking soda, salt and nutmeg in sifter; add alternately with hot apple juice to creamed mixture. Fold in raisins and currants. Allow to rest 15 minutes. Drop by teaspoonfuls onto lightly greased cookie sheet, 2 to 3 inches (5 to 7cm) apart. Bake at 350 degrees F (170 C) for 12 to 15 minutes. Yields 60 cookies. Remove from pan and place in a mixing bowl. Add brown sugar, catsup, and drippings. whisk in fruit vinegar until well blended. Use at the end of cooking to avoid bitterness.
