  1           envelope  brown gravy mix
  4 1/2         ounces  sliced mushrooms -- drained
                        [1 jar]
  2        tablespoons  prepared horseradish
  4                     beef tenderloin fillets -- 5 oz each
     1/8      teaspoon  pepper
Prepare gravy according to package directions; add mushrooms and 
horseradish. Set aside and keep warm.  In non-stick skillet, cook 
fillets over  medium  high  heat until meat reaches desired 
doneness (about 10-13 minutes for medium), turning once. Season 
with pepper. Serve with gravy.
Nutritional Analysis: One serving equals 268 calories. 714 mg 
sodium. 88 mg cholesterol, 7 gr. carbohydrate,  88 gm. protein,  
11 gm.  fat.
Diabetic Exchange: 4 lean meat,  1/2  starch.
EDITOR'S NOTE: Fillets can be baked. First brown in skillet for 1 
minute on each side, then transfer to an 8-in. square baking pan. 
Bake uncovered at 350F for 10-20 minutes or until meat reaches 
desired doneness.

  1                 pk  Cake mix -- gold, spice or white
     1/2             c  California dried figs -- stemmed
                        Soft white butter icing
Make cake according to package instructions, folding in figs which 
have been cut into small pieces.  Fill cup cake pans 2/3 full.
Bake 25 minutes at 375 F.
To make Spooks, turn cup cakes upside down. Place a dab of icing in 
the center, and set whole California dried fig upright with the stem 
standing erect at the top.  Let stand until firm, then ice the whole 
thing with soft white butter icing.  Let icing flow around the base of 
the cake to resemble a sheet.  Mark off slits for eyes.

  2 3/4              c  Flour
                        Orange food color
                        -----FILLING-----
  2                  c  Raisins
     3/4             c  Chopped walnuts
     1/2             c  Frozen orange juice
                        - concentrate -- thawed
Preheat oven to 375 degrees.
In a large bowl, cream butter and sugar with an electric mixer. Beat 
in egg and vanilla. Add baking powder, spice, and flour one cup at a 
time mixing after each addition. The dough will be very stiff; blend 
last flour in by hand. Do not chill dough. To tint with icing color, 
add small amounts until desired color is reached. 
Divide dough into 2 balls. On a floured surface, roll each ball into 
a circle approximately 12 inches in diameter. Dip Wilton "Jack-O-
Lantern Cutters" in flour before each use.
Place half the cookies on cookie sheets. Place 1 tablespoon filling 
on cookie. Cut eyes and mouth from remaining cookies. Place on top 
of filling. Press to seal edges. Bake for 12 to 15 minutes or until 
lightly browned. 
To make filling just mix all ingredients in a bowl. You can also use 
jelly.

  2             pounds  beef chuck or round steak -- 
                         cut 1 1/2-inch pieces
  1         tablespoon  browning sauce
     1/4           cup  cream of rice cereal
  4                     carrots, cut into 1 1/2-inch chunks
  2               cups  thinly sliced onion
  1                     garlic clove -- minced
     1/2      teaspoon  marjoram -- crushed [1/2  to 1 tsp]
     1/2      teaspoon  dried thyme -- crushed [1/2  to 1 tsp]
     1/4      teaspoon  pepper
  1                cup  low-sodium beef broth
  4 1/2         ounces  button mushrooms -- undrained
                        Hot cooked noodles -- optional
In a medium Dutch oven or 3-qt. casserole, toss meat with browning 
sauce. Mix in cereal. Add all remaining ingredients except noodles.  
Cover and bake at 325° for 2 to 2 1/2 hours or until meat and 
vegetables are tender.
Serve over noodles if desired.

  3             pounds  beef roast -- (3 to 4 pounds)
     1/2           cup  light soy sauce
  1                     low-sodium beef bouillon cube
  1                     bay leaf
  3              whole  peppercorns -- (3 to 4)
  1           teaspoon  dried rosemary -- crushed
  1           teaspoon  dried thyme
  1           teaspoon  garlic powder
                        bread or rolls of your choice
Remove and discard all visible fat from roast.  Place in a slow 
cooker.  Combine soy sauce, bouillon and spices;  pour over roast.  
Add water to almost cover roast. Cover and cook over LOW heat 10 - 12 
hours or until meat is very tender. 
Remove meat from broth; shred with a fork.  Serve on bread or rolls.

     1/2           cup  margarine
  4          teaspoons  granulated sugar replacement
  2                     eggs
  2               cups  flour -- sifted
     1/2      teaspoon  baking soda
     1/4      teaspoon  salt
     1/2      teaspoon  nutmeg
     1/4           cup  hot apple juice
     1/4           cup  chopped raisins
     1/4           cup  currants
Cream together margarine and sugar replacement.
Add eggs; beat until fluffy. Combine flour, baking soda, salt and 
nutmeg in sifter; add alternately with hot apple juice to creamed 
mixture.  Fold in raisins and currants.
Allow to rest 15 minutes.
Drop by teaspoonfuls onto lightly greased cookie sheet, 2 to 3 inches 
(5 to 7cm) apart.
Bake at 350 degrees F (170 C) for 12 to 15 minutes.
Yields 60 cookies.

                      Fruity Vinegar Barbecue Sauce

  1         Tablespoon  Butter
     1/4           Cup  Onion -- chopped
  2        Tablespoons  Brown Sugar, Packed
  12            Ounces  Tomato Catsup
  2        Tablespoons  Drippings
     1/2           Cup  Fruit Vinegar
                        Salt and Pepper -- To taste
Melt butter in a sauce pan and saute onion until translucent.  
Remove from pan and place in a mixing bowl.  Add brown sugar, 
catsup, and drippings.  whisk in fruit vinegar until well blended.
Use at the end of cooking to avoid bitterness.  Salt and Pepper to 
Taste
