  2                     onions -- finely chopped
  1                     garlic clove -- minced
  2        tablespoons  oil
  2             pounds  boneless skinless chicken breasts,
                        cut into finger-sized strips
     1/2      teaspoon  salt
     1/4      teaspoon  pepper
  4                     tomatoes -- chopped
  1                     jalapeno pepper -- seeded
                        and finely chopped
     1/2      teaspoon  ground cumin
  2               cups  chicken broth
  1                cup  Minute Rice, uncooked
1.  Saute onion and garlic in the oil. Season the chicken with salt and 
pepper, and brown lightly in the seasoned oil.
2.  Add the tomatoes, jalapeno, cumin and stock. Heat to boiling, cover, 
and simmer for 4-5 minutes.
3.  Add the rice and cover. Cook until rice and chicken are tender and 
liquid has been mostly absorbed.

  2                     extra-large   eggs -- (1/2  cup)
  1                cup  sugar
     1/4      teaspoon  anise oil
  1 2/3           cups  sifted all-purpose flour
     1/4      teaspoon  baking powder
Beat the eggs, sugar and anise oil until thick and piled softly.
Sift flour and baking powder together; add in fourths to the egg/sugar 
mixture, blending thoroughly after each addition.
Drop by teaspoonfuls 2 inches apart onto greased cookie sheets.
Set cookie sheets aside in a cool place - NOT in the refrigerator - 
for 8 to 10 hours or overnight. DO NOT COVER AND DO NOT DISTURB!
Preheat oven to 350F.
Bake cookies for 5 to 7 minutes.
Makes about 4 dozen cookies.
During baking, these German cookies form a cake-like layer with a crisp 
"frosting" on the top.
