     1/2           cup  butter -- 125 mL
  1 1/4           cups  brown sugar -- 300 mL
  2                     eggs
  1 1/2           cups  mandarin oranges -- 375 mL; chopped*
     1/2      teaspoon  salt -- 2 mL
     1/4      teaspoon  ground ginger -- 1 mL
     1/2      teaspoon  nutmeg -- 2 mL
     1/2      teaspoon  cinnamon -- 2 mL
  2               cups  white flour -- 500 mL
  4          teaspoons  baking powder -- 20 mL
  1                cup  raisins -- 250 mL
  1                cup  walnuts -- 250 mL; chopped
  1           teaspoon  vanilla extract -- 5 mL
* This cookie requires 6 to 8 Japanese mandarin oranges, chopped. 
The easiest way to do this is to peel and slightly freeze the 
oranges, then cut them with a sharp knife.
In one bowl cream the butter and sugar thoroughly and then add 
eggs, oranges and raisins.
In second bowl sift flour, baking powder and spices; add nuts. 
Add flour mixture to the creamed mixture and beat thoroughly. 
Blend in vanilla extract.
Drop from teaspoon onto greased cookie sheet. Bake for 15 
minutes at 300F.

  2               cups  sliced ripe mangoes
  2        tablespoons  lemon juice
  1         tablespoon  margarine
     1/3           cup  brown sugar
     1/4           cup  fat -- (lard)
     3/4           cup  sugar
  1                     egg -- beaten
     1/2           cup  milk
  1 1/4           cups  flour
  2          teaspoons  baking powder
     1/4      teaspoon  salt
Pour lemon juice over the mangoes and set aside for 15 minutes.
Preheat oven to 375F.
Melt margarine in an 8-inch cake pan or casserole dish.  Do not 
use an iron pan as the mangoes will darken.  Add the brown sugar 
and cover with the mango slices.
In a bowl, cream the fat (lard, or you could try something like
Crisco); beat in the sugar and cream; add the beaten egg.
Sift the dry ingredients together and add alternately with the 
milk. 
Pour the batter over the mangoes and bake for 50 to 60 minutes.
When done, invert the cake on a serving plate.
Serve warm.

  6                     eggs
     2/3          cups  sugar
  1 1/2            cup  flour (plain) -- sifted twice
  2               cups  whipping cream
  1                cup  Maraschino cherry syrup (from cherries)
  1 1/2           tsp.  Ronald Reginald's Pure Vanilla Extract
  1               tsp.  Ronald Reginald's Almond Extract
Combine eggs, sugar, and vanilla in a small mixing bowl. Beat 
over hot water for 3 to 4 minutes. Remove from heat and continue 
to whip for 8 minutes on high speed, fold in flour. Pour into 
greased and floured 10-inch baking pan.
Bake for 35 to 40 minutes at 350° F. Cool.
Slice cake into 3 thin layers.  Sprinkle with Maraschino cherry 
syrup flavored with almond extract.  Cover each layer with 
whipped cream and decorate top of cake with rosettes of whipped 
cream and whole Maraschino cherries.

  1              pound  fresh mozzarella cheese
  1         tablespoon  parsley -- coarsely chopped
  2        tablespoons  fresh basil -- chopped
     1/2           cup  strong olive oil
  2          teaspoons  lemon juice
Cut the mozzarella into 1-inch cubes. Place in a bowl. Add the 
parsley, basil, oil, and lemon juice and toss to coat. Let sit at 
room temperature for 3 to 4 hours before serving.
