2 orange roughy fillets (1/2 to 1 pound total)
3 tablespoons vegetable oil
Breading:
1 egg -- beaten
1/4 cup soy milk (vanilla flavored) OR
1/4 cup milk of your choice
1/8 cup white wine
3/4 cup flour
3/4 cup cracker meal
1 teaspoon Sunny Spain Seasoning by Penzeys* -- divided
Table Sauce:
1/2 cup light mayonnaise
3 tablespoons pickle relish -- drained
1 tablespoon lemon juice
1 pinch garlic pepper -- to taste Mix egg, milk and wine and pour into a flat bowl. Place flour and
cracker meal in separate flat bowls. Divide the Penzeys seasoning
among the three bowls. Stir seasoning into each of them. Set aside.
Dry fish fillets and place near breading ingredients. Heat a heavy frying pan on medium temperature until the rim is hot.
Add the oil. Dredge fillets in seasoned flour, dip in egg mixture and drain excess,
and press into seasoned cracker meal making certain all surfaces are
covered. When oil is hot, gently place breaded fillets into pan. After about a
minute, shake pan or slide a spatula under the fillets to make certain
they are free from the pan. Cook for about 4 minutes (but adjust
depending on thickness). Gently turn fillets over and cook on second
side for another 4 - 5 minutes. Remove from pan and place on warmed plates; serve immediately. Fish
cools quickly, so have everything else ready and eat it while it almost
burns your tongue. Serve with Table Sauce. Table Sauce: Mix sauce ingredients and serve on the side at the table. Start to Finish Time:
