   4                    ripe plum tomatoes -- seeded & chopped
   1      small         onion -- diced
   1                    green or red bell pepper -- diced
   1                    cucumber -- peeled & chopped
   1      small         jalapeno
                        OR serrano pepper -- seeded & minced
   2      cloves        garlic -- minced
   2      tablespoons   minced fresh basil
   1 1/2  teaspoons     ground cumin
     1/2  teaspoon      hot pepper sauce -- or to taste
     1/4  teaspoon      salt
     1/4  teaspoon      black pepper
   2      cups          canned tomato juice
                        croutons for serving -- (optional)
Place all the ingredients except the tomato juice and croutons in a 
food processor fitted with a steel blade.  Process for 10 to 15 
seconds, forming a mash.  Transfer to a large bowl.  Blend in the 
tomato juice.
Chill for at least 1 hour before serving.  Serve with croutons, if 
desired.

     3/4  cup           butter or margarine
   1      cup           sugar
   1                    egg
   3      Tbsp          dark molasses
   2      cups          all purpose flour
   2      tsp           baking soda
   1      tsp           cinnamon
   1      tsp           ginger
     1/4  tsp           cloves
     1/4  tsp           salt
   1      cup           semi-sweet chocolate pieces
                        Sugar for rolling cookie balls
(1) Cream butter and sugar. Add egg,, molasses, flour, baking soda,
cinnamon, ginger, cloves, and salt. Blend until smooth dough forms, 
using low speed on mixer.
(2) Stir in semi-sweet chocolate pieces.
(3) Shape into 1-inch. balls. Dip tops of balls in sugar. Place 
dipped side up on greased cookie sheet.
(4) Bake at 375* F for 10 to 12 min. or until cookies are browned and
 firm.  
(5) Hint- keep hands wet with water, no stickum.
Prep Time 10 min; Baking time, 10-12 min. for each sheet 
Oven temp 375* F

   2      cups          cranberries -- washed and cleaned
   2      small         size unpeeled oranges -- cut into 1" pieces
                         -- (temple or navels
                        are best)
   1 1/2  cups          sugar
     3/4  cup           water
   2      Tablespoons   minced preserved candied ginger
                         -- (don't leave this out)
     1/4  teaspoon      ground cloves
     1/4  teaspoon      cinnamon
1.  Combine the sugar and water in a saucepan, bring to a boil over 
moderately low heat, stirring  occasionally. Simmer syrup 5 min., set 
aside and let cool.   2 In a large bowl combine cranberries, oranges, 
ginger and the syrup.   3. Transfer mixture to a blender and chop in 
batches.  4.  To this mixture stir in cloves and cinnamon.  
This relish is best after it sits overnight.  It will keep weeks in 
the refrigerator and freezes beautifully, if you hide it.
