-------- ------------ -------------------------------- 1 Can (6 Oz) Frozen Orange Juice Concentrate -- OR
1 1/2 C Orange Juice
1 Tbsp Orange Rind -- grated
2 Tbsp Soy Sauce, Low Sodium
1 Tbsp Onion -- minced
1/4 C Parsley, Or 1 Tsp Dried -- chopped
1 Clove Garlic -- minced
1/4 Tsp Pepper
1 Chicken, Skinless -- cut in pieces Preheat oven to 400 F. Combine all ingredients except chicken. Place
chicken in a 9 x 12-inch pan. Pour marinade over chicken. Cover pan (foil)
and bake for 45 mins. Uncover and continue baking until tender. Baste
several times with sauce. If desired, thicken remaining sauce in pan and
serve as gravy. Makes 6 servings. (Author's Note): Very easy to prepare. Sauce is great over rice or
potatoes. You may also marinate the chicken in sauce 8 hours or overnight
