                        CRUST:
   1      pkg           Pineapple cake mix
     1/2  cup           butter/margarine
                        OR
   1 1/2  cup           graham crumbs
   1      tsp           pineapple extract
     1/2  tsp           orange extract
     1/2  cup           butter margarine
                        FILLING:
   1      pkg           orange gelatin -- (4 serving)
   1      cup           boiling water
   2      pkg           cream cheese
   1 1/4  cup           whipping cream
     1/2  cup           sour cream
   2      cans          mandarin oranges -- (11oz can)
     Heat oven to 350F.
     For Crust, combine ingredients until crumbs form.  Press
into springpan. Bake for 20 minutes if using cake mix, 10 minutes
if using crumbs
     Dissolve gelatin in boiling water.  Refrigerate until
thickened.  Beat cream cheese in large bowl, beat in gelatin
mixture.  Beat whipping cream in large bowl and add into cream
cheese mixture.  Chop 1 can of drained orange sections, add to
mixture and pour into crust.  Refrigerate until firm (3-3 1/2
hours).  Drop tsps of sour cream and garnish with remaining
mandarin slices.

     1/4  cup           apple juice
   2      tablespoons   brown sugar -- (to 3 tbsp)
   1      large         ripe mango -- peeled, pitted & sliced
   3                    bananas -- (to 4) peeled &
                        sliced crosswise
     1/4  teaspoon      ground cinnamon or nutmeg
     1/4  cup           dark rum
                        splash  banana liqueur -- (optional)
In a large skillet, combine the apple juice and brown sugar.  Cook over medium
heat for about 3 minutes, stirring frequently.  Add the mango, bananas, and
cinnamon, and cook for 3 to 4 minutes, stirring occasionally.  Turn the slices
gently, coating them with the juice mixture.
Remove the pan from the heat and add the rum and optional liqueur.  Return to
the heat and bring to a simmer over medium heat.  Carefully touch a lighted
match to the pan, "flaming" the fruit.  Allow the flame to subside and continue
cooking for 1 minute.
Spoon the fruit onto warm plates and serve at once with ice cream or a frozen
nondairy dessert.

    1/2                 red bell pepper, finely diced
    1/2                 green bell pepper, finely diced
  1        small        onion finely diced
  2                     green onions, white and green parts finely diced
  1        small        jalapeno pepper, seeded and finely diced
  1                     mango, peeled and finely diced
  3        Tbsp         soy sauce
  4        Tbsp         white Karo syrup (corn syrup) 
                        salt and pepper to taste
                        a little pineapple, orange juice or mango juice
Mix all in a glass bowl and chill to let the flavors blend. Can be served
with grilled fish or chicken. Can add more or less peppers if you want it 
hotter or not hot at all.

  1        cup           mango or papaya, peeled, seeded, and chopped
  1        medium        sweet green pepper, seeded and chopped (3/4 cup )
  1        small         red onion, finely chopped
  1                      jalapeno pepper, finely chopped
  2        tbsps.        pineapple juice or peach nectar
  1        Tbsp          lime juice
    1/8    tsp.          salt
    1/8    tsp.          pepper
Stir together mango sweet pepper, onion, jalapeno pepper, pineapple 
juice, lime juice, salt and pepper in a large bowl. Cover and refrigerate 
up to 3 or 4 days.
Makes 1 1/2 cups 
Calories per Tbsp   9   Fat   0 g   Fiber   1 g.
