2 cups graham crackers -- crumbs
1/3 cup butter -- melted
1/4 cup sugar
Filling:
24 ounces cream cheese
3/4 cup sugar
4 tablespoons orange zest -- freshly grated
1 tablespoon flour
6 eggs
2 tablespoons frozen orange juice concentrate -- thawed
1/2 cup maraschino cherries -- chopped
1/4 cup maraschino cherry juice
Topping:
1 pint sour cream Combine the crumbs, sugar and butter until crumbly. Press into the bottom
and sides of a 9 to 10 inch springform pan. In the large mixer bowl, beat the cream cheese and sugar until light and
fluffy. Beat in the orange zest and flour. Beat in the eggs, one at a time
and then add the orange juice concentrate, maraschino cherries and juice.
Pour the filling into a prepared crust and bake for 50-60 minutes. The
center should be firm. Cool for 15 minutes. Top with the sour cream and bake for 10 minutes at 450 F. Remove from the
oven and cool to room temperature. Freeze for 5-8 hours. Set out at room
temperature for 20 minutes before serving. Recipe from Carol McGee
