Paradise Salad

1 package Jell-O -- (3 ounces)
1 cup water
1 cup sour cream
1 cup cottage cheese
1 cup pineapple, crushed
1/2 cup coconut, shredded

Add Jell-o to 1 cup boiling water. Original said lime Jell-O, but I always
use cherry. Allow to cool to near room temperature.

Thoroughly mix in sour cream. Incorporate cottage cheese and pineapple.

Spread in 8-inch pan. Top with coconut. Chill.

Don's comment: My in-laws do a very informal family brunch late Christmas
morning. I usually bring a double batch of this for the expected 15-20
people. I make it in a double walled 9 x 13 cake pan. It stays cooler
longer.

Pineapple Banana Hummingbird Mini Loaves

1 package yellow cake mix -- 2-layer size
1 package vanilla Instant pudding and pie filling
[3.4-ounce size]
4 eggs
1/4 cup vegetable oil
1 teaspoon ground cinnamon
1 20 ounce can crushed pineapple juices -- drained
[reserve 1 cup juice reserved]
2 medium bananas -- well mashed (1 cup)
1/2 cup chopped pecans
Cream cheese glaze:
2 ounces cream cheese -- softened
1 tablespoon milk
1/2 cup powdered sugar

Preheat oven to 350 F.

Combine cake mix, dry instant pudding, reserved pineapple juice, eggs and
oil in large bowl with mixer 2 minutes or until blended. Add crushed
pineapple, bananas and nuts, mix just until blended.

Pour prepared batter into 5 foil mini-loaf pans, sprayed with nonstick
cooking spray. Bake 40 minutes or until toothpick inserted in center of
cake comes out clean. Cool completely.

Drizzle with cream cheese glaze and garnish with additional chopped pecans,
if desired.

Cream Cheese Glaze; combine cream cheese and milk, add powdered sugar;
drizzle over cooled loaves.

Makes 5 mini loaves, serves 30.

Variation: For a delicious variation substitute 1 cup maraschino cherries,
drained and halved, for the bananas and omit the cinnamon.

Bobbie's comment: I made this for small neighborhood gifts. I've had
several requests for the recipe. It is very good.
This was yummy. I made 6 small loaves, instead of 5.

Popcorn Rings

3/4 cup brown sugar
3/4 cup white sugar
1/2 cup water
1/2 cup white corn syrup (Karo)
1 teaspoon vinegar
1/2 teaspoon salt
1/2 cup butter or margarine
10 cups popped corn
1 cup miniature marshmallows
1 cup Milk chocolate M&M's -- Seasonal colored
1 cup dry roasted peanuts

In a saucepan mix the first six ingredients and bring to soft crack. Stir
in the butter or margarine. Pour slowly over the popped corn and mix
slightly. Add marshmallows, M&M's and peanuts and continue to fold over
until incorporated. Put into a greased mold (I use a bundt pan). Press
down and turn out onto waxed paper to cool.

Try very hard not to eat all of it in one sitting.

Jennie's comment: Just finished the annual Christmas popcorn. When my kids
get this in the mail, they say that "this is the REAL meaning of Christmas.
