* Exported from MasterCook * Oven Fried Buttermilk Chicken Recipe By : Unknown Serving Size : 4 Preparation Time :0:00 Categories : Volume 15-10 Oct 2012 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- **Marinade** 2 cups buttermilk 1 teaspoon minced fresh thyme -- divided into 2 parts 1/2 teaspoon garlic powder 1/2 teaspoon paprika 1/2 teaspoon dry mustard 1/2 teaspoon salt 1/4 teaspoon pepper 4 bone-in chicken breasts -- skin removed 1 1/2 cups panko bread crumbs Olive oil spray In a small bowl stir together the buttermilk, garlic powder, paprika, mustard, salt, pepper and half the thyme. Add the chicken to the marinade and turn to coat. Cover and refrigerate for 8 hours or up to 24 hours. In a shallow bowl combine the panko and the rest of the thyme. Remove the chicken from the marinade; discard the marinade. Press the chicken into the panko mix to coat. Place into a large baking dish with sides. Spray with oil. Bake at 375F for about 30 minutes. Hallie's notes. This dish was served to me by a friend while I was on a holiday recently. The chicken was lovely and moist. I think chicken thighs would work just as well and obviously the seasoning can be varied according to personal taste. I have no idea where the recipe originally came from. Also, I am not sure if you are supposed to spray the pan or the chicken with the olive - I just copied the recipe as it was given to me; I will probably spray the pan when I make it (or maybe both).
