Cherry Champion Bars

1 cup margarine -- softened
3/4 cup granulated sugar
3/4 cup firmly packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1 package vanilla milk chips -- (12 ounce)
2 cups dried tart cherries
1 cup coarsely chopped pecans
Added nonstick spray coating

Combine margarine, granulated sugar, and brown sugar in a large mixing
bowl. Beat with an electric mixer on medium speed until well blended. Add
eggs and vanilla. Combine flour and baking powder; gradually add to
mixture. Stir in vanilla milk chips, dried cherries and pecans. Spread
dough evenly in greased 15 x 10 x 1-inch baking pan. Bake in a preheated
350 degree F oven 20 minutes, or until light golden brown. Do not over
bake.

Cool in pan, then cut into bars. Store in airtight container. These bars
freeze well.

Makes 4 dozen bars (48 bars)

Prepare and freeze these extraordinary bars in advance of the party.

Chocolate Bread Pudding

1 pound loaf French or Italian bread, cut into cubes (about 15 cups)
3 cups milk
1/4 cup heavy cream
1/2 cup coffee-flavored liqueur
1 cup granulated sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
2 teaspoons pure almond extract
1 1/2 teaspoons ground cinnamon
6 large eggs, lightly beaten
8 ounces semisweet chocolate chips

Preheat the oven to 325F. Lightly grease a 13 by 9-inch baking dish.

Place the bread in the baking dish.

In a large bowl, whisk together the milk, cream and liqueur.

In another bowl, combine the granulated and brown sugars with the cocoa
powder and mix well. Add this to the milk mixture and whisk to combine.

Add the vanilla and almond extracts and the cinnamon to the beaten eggs.
Combine the egg mixture with the milk mixture and mix well. Stir in
chocolate chips. Pour the mixture evenly over the bread cubes; let stand,
stirring occasionally, for at least 20 minutes, or until the bread has
absorbed most of the milk mixture. Bake the pudding for 1 hour or until
set; a knife inserted into the center of the pudding should come out clean.

Serve the pudding warm or refrigerate it and serve chilled with whipped
cream or a dessert sauce. (See Cream Sauce below.)

Inactive Prep Time: 20 minutes
Cook Time: 60 minutes

Serves: 10 to 12 servings

Cream Sauce
-----------
2 cups heavy cream
1/4 cup Irish cream liqueur
1/4 cup sugar
3 tablespoons cornstarch
Water, to dissolve cornstarch
1 teaspoon vanilla extract

Heat heavy cream, Irish cream liqueur and sugar. Mix cornstarch with
about 1 tablespoon of water. Stir into the cream mixture and heat until
thickened. Add vanilla. Serve over bread pudding.

Cook's Note: Makes about 2 1/2 cups. You can make this up to 3 days in
advance.
