* Exported from MasterCook * Old-Time Italian Sausage Frittata Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Volume 15-05 May 2012 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Italian Sausage meat 1 small sweet onion, diced 3 tablespoons oil, optional 1 pound hash brown potatoes, frozen 1/2 teaspoon salt, to taste 1/2 teaspoon black pepper, to taste 8 eggs, beaten 1/2 cup Parmesan cheese 2 tomatoes, thinly sliced Preheat oven to 375F. Sauté meat with onion in a non-stick skillet until done, about 10 minutes. Remove from pan. In same pan with added oil, if needed, cook hash browns until golden brown, about 10-12 minutes. Lightly season potatoes with a little salt and pepper (optional)-- hash browns are already salted from package. Add half of sausage mixture to potatoes. With back of large spoon, press potato-sausage mixture evenly onto bottom of skillet. Add the eggs to the remainder of the sausage meat; add salt and pepper and mix with fork. Pour the egg-sausage meat mixture over potatoes and cook for about 3 minutes until egg mixture begins to set around edges. Place skillet in oven and bake for 10 to 15 minutes or until eggs are done. Thinly slice tomatoes and arrange on top. Sprinkle with Parmesan cheese. Let stand for 5 - 10 minutes before serving.
