* Exported from MasterCook * Cheesecake Cookies Recipe By : Picnics & Tailgate Parties Serving Size : 16 Preparation Time :0:00 Categories : Volume 15-04 Apr 2012 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup butter or margarine 1/3 cup firmly packed brown sugar 1 cup all-purpose flour 1/2 cup finely chopped walnuts 1/4 cup granulated sugar 8 ounces cream cheese 1 egg 1/2 teaspoon vanilla 2 tablespoons milk 1 tablespoon lemon juice In a small bowl, cream butter and brown sugar until light and fluffy. With a fork, blend in flour until mixture resembles fine crumbs. Stir in walnuts. Reserving 1 cup for topping, press the remaining mixture into a greased 8- inch square pan. Bake in a 350F oven for 12 to 15 minutes. Meanwhile, in another bowl, beat granulated sugar and cream cheese together until fluffy. Add egg, vanilla, milk and lemon juice; beat until smooth. Pour the cream cheese mixture over the baked crust and sprinkle evenly with the remaining crumb mixture. Bake in a 350F oven for 20 minutes. Let cool then refrigerate. To take to the picnic, transport in the pan packed in a cooler. To serve, cut into squares and remove from the pan with a spatula. Makes 16 cookies. Back to Recipe List * Exported from MasterCook * Creamy Ham & Potatoes Recipe By : Wendy Rowley Green River, WY Serving Size : 2 Preparation Time :0:00 Categories : Volume 15-04 Apr 2012 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large red potatoes -- cubed 1/3 cup process cheese cubes -- (Velveeta) 3/4 cup fully cooked ham -- cubed 1 tablespoon dried minced onion 2/3 cup condensed cream of celery soup -- undiluted 2/3 cup 2% low-fat milk 1 tablespoon all-purpose flour 1/4 teaspoon pepper In a 1 1/2-quart slow cooker coated with cooking spray, layer the potatoes, cheese, ham and onion. In a small bowl, combine soup and milk; whisk in flour and pepper. Pour over potatoes. Cover and cook on Low for 5-6 hours or until potatoes are tender. Stir before serving. Yield: 2 servings. It is a cozy; comforting entree or side dish. Bobbie's Note: I made this recipe without the crockpot. I cooked the potatoes until almost done; then made the sauce in the microwave, adding the cheese after thickening, then the ham and potatoes. It was delicious but there was a bit too much liquid. Next time if I make it this same way I would cut the amount of milk down to 1/3 cup. More can be added if needed.
