* Exported from MasterCook * Pineapple Delight Recipe By : Mary Hunka Serving Size : 10 Preparation Time :0:00 Categories : Volume 15-03 Mar 2012 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- **Base** 2 1/2 cups fine graham cracker crumbs 1/2 cup melted butter **Filling** 1/2 cup butter 1 1/2 cups icing sugar -- (powdered sugar) 2 egg yolks **Topping** 1 cup heavy cream -- (whipping cream) 1 can crushed pineapple -- well drained Base Mix the graham cracker crumbs and the melted butter together. Press into an 8x10-inch pan. Bake for 15 minutes in a 320F. oven. Cool. Filling Cream the butter. Add the icing sugar. Mix well and add the egg yolks. Beat until light and fluffy then spread on the cooled crust. Topping Whip the cream and fold in the pineapple. Spread on top of the Filling. Chill and cut into squares.
