* Exported from MasterCook * Capellini Puttanesca Bianca with Chicken and Vegetables Recipe By : Art Guyer Serving Size : 6 Preparation Time :0:00 Categories : Volume 15-02 Feb 2012 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 boneless chicken breasts, trimmed and pounded to an even 3/4-inch thickness 3 tablespoons olive oil, or more as needed 1 pound capellini pasta 1 cup extra virgin olive oil 2 cans anchovy fillets in oil 1 teaspoon dried pepper flakes 3 tablespoons capers 1 tablespoon chopped garlic 4 tablespoons fresh Italian parsley, chopped finely 2 cups sweet peppers, seeded and chopped 1 cup sweet onion, chopped 4 cups baby spinach, stems removed 2 large tomatoes 10 black olives, sliced 3 tablespoons seasoned bread crumbs, optional salt and black pepper, to taste Prep the vegetables. I put the tomatoes in boiling water and remove the skin before cutting them up. Sauté chicken in olive oil, in batches if necessary. Cover and set aside. Prepare pasta according to directions on the package. Continue with recipe while pasta cooks. Put olive oil in a large wok or skillet over medium heat. Add anchovies and stir until they have dissolved. Add pepper flakes, spinach, sweet peppers and onions; sauté 5 minutes. Add garlic and sauté unit it begins to change color. Stir in parsley, capers and olives; season with salt and pepper and cook for another 3 minutes. Add tomatoes, remove from heat and mix well with cooked pasta, gradually adding bread crumbs (if using). Continue to toss until thoroughly mixed. Thinly slice chicken breasts and fold into pasta. Heat butter in a saucepan. Add chicken, garlic and onions; saute until they turn golden brown. Stir in tomatoes and bring to a boil; lower heat and simmer, covered, for 30 minutes. Add potatoes; continue to simmer for 30 minutes or until the chicken and potatoes are well cooked. Serves 4 to 6. Mix flour and seasoned salt together. Dredge chicken in the flour mixture and sauté in oil over medium heat, browning both sides. Cover and bake 35 minutes. Bring chicken broth to a simmer, add mustard and honey. combine cornstarch with water and stir into broth mixture. Add salt and pepper to taste. Serve over chicken breast. Microwave on Full Power, uncovered, for 60-90 seconds or until steaming hot. Stir until chocolate is melted. Add egg substitute or egg and sugar to chocolate mixture. Beat until well blended. Stir in vanilla and bread cubes. Spoon mixture into two 6-ounce microwave-safe custard cups. Microwave on 70% powder, uncovered, 3 to 4 minutes or until puffed and set, rotating dishes once. Serve warm or cold Top with frozen vanilla yogurt or whipped topping, if desired.
