Impossible Chicken and Broccoli Pie

1 package frozen broccoli
or 1 fresh bunch
3 cups shredded cheddar cheese
1 1/2 cups cut up cooked chicken
1 1/3 cups milk
3 eggs
3/4 cup biscuit mix -- (such as Bisquick)
1/4 teaspoon salt
Pepper -- to taste

Preheat oven to 400F. Have ready a 10x1-1/2-inch pie plate.

Mix the broccoli, 2 cups of cheese and the chicken in the pie plate.

Beat the milk, eggs, baking mix, salt and pepper until smooth (about 15
seconds at high speed in a blender or 1 minutes with a hand beater). Pour
into the pie plate.

Bake until a knife inserted in the center comes out clean, 25 to 35
minutes.
Top with the remaining cheese and continue to bake just until the cheese is
melted, 1 to 2 minutes longer. Cool for 5 minutes.

Yields 6 to 8 servings.

Impossibly Easy Chicken 'n Broccoli Pie

10 ounces frozen chopped broccoli -- thawed and drained
1 1/2 cups shredded Cheddar cheese -- (6 ounces)
1 cup diced cooked chicken
1 medium onion -- chopped (1/2 cup)
1/2 cup Original Bisquick(R) mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs

Heat oven to 400F. Grease 9-inch pie plate.

Stir Bisquick mix, milk, salt, pepper and eggs until blended. Pour into pie
plate.

Bake 30 to 35 minutes or until knife inserted in center comes out clean.

Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or just until
cheese is melted. Cool 5 minutes.

Don's notes: In the last several years, Betty Crocker has modified most of
it's Impossible Pie recipes to make them somewhat more in keeping with
current dietary guidelines, particularly less fat and sodium. They can be
identified by the name "Impossibly Easy" as opposed to "Impossible Pie".
Here's the version for the Chicken and Broccoli Pie, which I make once in a
while. I further modify it by doubling the onion, leaving off the 1/2 cup
cheese topping, cutting the salt in half and adding 1 teaspoon Italian
Seasoning. I use 1/8 teaspoon black pepper. I also use my mixed up extra
strong powdered milk and my own baking mix which includes bean flour.
