Emeril's Peanut Butter-Chocolate Chip Cookies

1 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed light-brown sugar
1/2 cup semisweet chocolate chips
1 large egg -- beaten
1 teaspoon pure vanilla extract

Preheat oven to 350 degrees F, with racks in upper and lower thirds.

In a large bowl, combine all ingredients and stir with a wooden spoon until
smooth. Divide dough into 24 portions, about 1 heaping tablespoon each.
Roll each piece between your hands to form a smooth ball. Place dough
balls, 1 inch apart, on two ungreased baking sheets. Using a fork, press on
dough in two directions to form a crosshatch pattern.

Bake cookies until puffed and lightly golden, 10 to 12 minutes, rotating
sheets halfway through. Let cookies cool on sheets.

Makes 24 cookies.

NOTES : Making these cookies is a perfect family activity -- the absence of
flour means there's no fuss and no muss. Plus, the cookies come together in
a snap. Let the kids help measure everything, stir the ingredients together
with a spoon, then scoop, roll, press and bake! Oh yeah, simple never
tasted so good.

Bobbie's Note: So delicious and very easy. Great for those who are gluten
intolerant.

4 tablespoons cayenne pepper or paprika [for the Big Chicken]
1 tablespoon chili powder
1 tablespoon Mrs Dash Extra Spicy [or other similar seasoning]
1 teaspoon brown sugar
3/4 teaspoon fresh ground melenge pepper
1/2 teaspoon Coleman's mustard powder
1/2 teaspoon white pepper
1/2 teaspoon lemon pepper

This is very hot!!!!!!

Make sure your ingredients are no salt. Use your favorite seasoning salt or
herb mix. The original called for Lawry's.

In a bowl, mix the first three. [Do not use the paprika unless you want to
tone it down. I did that for the other half who still won't eat it because
it is too hot.]

In another bowl, mix the rest. Mix together. Use immediately or store in a
cool dark place.

Keeps for several months.

The original was Miller's Plutonium Free Thermonuclear Seasoning that
he claimed he found under a mountain in Nevada.

4 tablespoons cayenne pepper
1 tablespoon chili powder
1 tablespoon Lawry's Seasoned Salt
1 teaspoon dark brown sugar or 1 teaspoon light brown sugar
3/4 teaspoon black pepper
1/2 teaspoon dry hot mustard powder
1/2 teaspoon white pepper
1/2 teaspoon salt-free lemon pepper

Directions:
In a bowl, mix the cayenne, chili powder and seasoning salt; mix
thoroughly.

In another bowl, mix the remaining ingredients.
Transfer this mixture to the first bowl and blend thoroughly.

Use immediately or store in a cool dark place.
Keeps for several months.
