* Exported from MasterCook * Old Fashioned Butterscotch Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 14-06 Jun 2011 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups brown sugar 1/4 cup molasses 1/2 cup butter 2 tablespoons water 2 tablespoons vinegar Place the brown sugar, molasses, butter, water and vinegar in a large pan, large enough to allow for foaming. Stir over a quick heat until sugar is dissolved. Boil quickly, stirring frequently, to the hard crack stage [300 F]. Drop from a teaspoon onto a buttered slab or buttered foil to form patties. Let cool. Makes 1 pound. From the Joy of Cooking 1964 edition [I learned from the 1974 edition]. Do note if you are like me, it also makes a great topping for ice cream.
